Tuna Muffins






I am trying to branch out a little more and try even more GI diet recipes. I basically choose a recipe by its name and tuna muffins never sounded very exciting. Once I actually took the time to read through the entire recipe I learned that these "muffins" were really more like mini meatloaves, made out of tuna of course. The reason why I like this recipe so much is that it is basically made with staples that I have in the kitchen at all times. Tuna, celery, onions, spices, bread and oat bran. It would even be nice to add in some shredded carrots. So this is a good "go to" recipe if you find yourself stuck one night.

SERVED WITH: My favorite mushroom and arugula salad

COOKING TIPS: Let the muffins cool down for a few minutes before removing them from the pan. The tuna muffins don't really stick together as you think they would. I found the best way to get the paper liners off was to place it on the plate, peel down the edges and slide it off the paper onto the plate.

Cocoa Spice-Rubbed Steak






This recipe calls for a top sirloin grilling steak. I don't know enough about steaks to know what the difference is between cuts of beef so I went ahead with their recommendation and purchased what was called for. Unfortunatley the cut of beef was not desirable and I didn't finish my meal. The steak was far to marbelled for my taste. I have nothing bad to say about the rub on the steak. It smelled great and tasted quite flavorful. Next time I would buy a better cut of meat.

SERVED WITH: I served the steak with a side of mushrooms and a delicious salad a good friend of mine served to me for dinner one night at her place. chop up some cucumbers and grape tomatoes, mix them with some crumbled feta and sprinkle a some pumpkin seed over top. Splash the salad with a dressing of equal parts lemon juice and olive oil.

COOKING TIPS: Just grill it up and serve.

RATING: 4. This rating is for the steak only not the side dishes served with it. It got a 4 simply because of the cut of meat.

Coffee and Spice Rubbed Chicken Breasts






Have you guessed what the secret ingredient is in this dish? Coffee! I tried this recipe simply because I thought "how weird" when I read that you coat the chicken in a mixture of spices and COFFEE of all things. I was not disappointed. The GI Diet cookbook created another winner. Check out the first photo above. It's a shot of all the spices just before I mixed them together. There are a lot of different spices in this dish and I couldn't resist taking a picture of all the rich colours.

SERVED WITH: I served this spicy chicken with some nutty brown rice, broccoli and slices of tomato's. A friend of mine recently introduced me to a really delicious new tomato called a "Kumato". If you can find them in your local grocery store I encourage you to try them out. Don't let the funny brownish colour fool you, they are yummy and full of flavor. I made enough chicken so that I would have left overs to chop up and mix into my salad for lunch the next day.



COOKING TIPS: Instead of grilling the chicken I chose to pop the chicken under the broiler. It took about 15 - 20 minutes to cook all the way through. The recipe is easy and straight forward.

RATING: 9. This chicken is spicy and delicious.
